Thanks for all the replies. I finally found out how to fix the problem, which I post below for the benefit of others who may run into it. I still have no clue what causes it to happen. It seems completely unpredictable. I back up everything now, immediately, before I close GB because I never know when it's going to wipe out my tracks.
If you open GB and get error messages about AIF files not found, and the AIFs are named with your real instrument track names, the way to fix GB seems to be as follows:
1. Close GB.
2. In Finder, navigate to your user account (click on it in the Finder sidebar).
3. Select: Library > Preferences
4. In Preferences, find the file com.apple.garageband.plist and send it to Trash
Now restore your trashed project from back-up. Hopefully you have backup because the real instrument AIF files in the Media folder of the project package were snuffed by GB.
The next time GB starts, it should no longer wipe out your real instrument tracks. But if you changed any of the default settings in GB preferences you now have to set them again.
I hope nobody else will ever run into this, but if you do, well, that fix has so far always worked for me. Knock knock. Really... back up every project you work on before you close GB.
BTW - the first time this happened, I could attribute it to a hard shut-down when the MacBook ran out of battery, probably while GB was writing to disk. But I have subsequently reinstalled both Mac OS and applications, and I still never know when GB is going to silently wipe out my work when I exit (or maybe on restart, I don't know).
This instability is totally unacceptable and I'm in the process or looking for different recording software.
