I’ve just installed LO on Elementary OS and I’m having trouble adjusting the resolution to fit my monitor, does anyone know how to do this as I’ve looked for a few hours now and have not yet found the solution?

Ask in relevant forum
LO has nothing to do about the screen resolution. It just uses the resolution provided by the graphic environment. Ask in the forum about your OS.
